Here it is. My first food blog post! So now I can PIN my own picture! When we gave up pasta we knew we would keep eating spaghetti squash for Italian-style meals but we discovered zoodles too. For the meatballs, I modified a healthier meatball recipe I found on Pinterest. (I forgot to take a picture of the meatballs. I thought I had one from the last time to post, but no such luck. So use your imagination to visualize them.) Here's what you need.
- 1 lb organic grass fed beef
- 1/2 cup almond flour
- 2 T coconut flour
- 1/2 cup fresh grated Parmesan
- 1 t. Italian seasoning
- 1-2 T dried parsley
- 1/4 t garlic salt
- 1/4 t pink salt
- dash of pepper
- 2 T minced onion ( I chop and freeze a few at a time to make it easy to use)
- 2 organic eggs
- 1/2 cup warm water
- 4-8 oz natural organic mozzarella, shredded or sliced thin
- jar of organic marinara sauce
- organic zucchini
Meanwhile, use the spiralizer to make zoodles from organic zucchini. We use 4 small for our two dinner size servings. Gently turn meatball over to brown on other side. Bake additional 8-15 minutes until cooked through and nicely browned. While they are finishing cook the zoodles over low heat 5-10 minutes.
Remove meatballs from the oven and place in shallow casserole. Cover with organic marinara sauce that you have already warmed. Top with shredded organic natural mozzarella. Put back in oven until cheese is melted.
Boy do I wish I had a picture of the meatballs! I could borrow the picture from Pinterest but I don't know yet how to credit other pictures. So use your imagination or look for almond flour meatballs on Pinterest yourself. My modifications made them even better than those, but they look the same. I need to figure out how to post the nutritional information too. Next time.
